  • What is kimchi?

    Kimchi is a traditional Korean fermented dish, usually made with Chinese leaf cabbage and other vegetables (although the base may vary) and seasoned with a mix of ginger, garlic, onion and gochugaru - aromatic Korean chili flakes. Each region, even each family, has its own kimchi recipe. Using original Korean ingredients, we try to keep ours as close to authentic Korean recipes as possible.

  • What is fermentation?

    Fermentation is an ancient method of preservation that transforms sugars into acids. The type of fermentation used for our products is wild fermentation using salt. This means no external bacterial cultures or acids are added to the vegetables to facilitate the process - it relies on adding enough salt to kill pathogens, but not too much, so as to not kill the bacteria responsible for the transformation - lactobacillus.

  • What makes your kimchi vegan?

    Kimchi is traditionally produced with added seafood (like anchovies, shrimp paste, squid etc) and fish sauce. Our kimchi is made exclusively of plant ingredients and we use high quality Japanese soy sauce instead of fish sauce.

  • Do the products contain added sugar?

    While unrefined brown sugar is added at the beginning of production, it is used mostly to facilitate fermentation. It is transformed in the process and as a result there is no added sugar in the end product. There is no need for concern if you are avoiding processed / added sugars.

  • Are any of the products gluten free?

    Some of our products, like chrain, are made without any ingredients containing gluten. However, we do use gluten containing ingredients on our premises and we are placed close to a mill, therefore we can never guarantee our products would be safe for someone with coeliac disease.

  • What can I have kimchi with?

    Basically - anything you want. It can be used as a side, but also as an ingredient in simple and more complex dishes, from eggs or mac and cheese to fried rice and stews. A kimchi cheese toastie is a widely enjoyed favourite. For more ideas check our story highlights on Instagram.

  • How soon can I expect my online order?

    Most online orders are shipped on Mondays and are delivered within 48h from shipment. Occasionally orders placed before Wednesday will be shipped the next day to ensure the products do not spend too much time in transit.
